Have a Berry Happy 4th of July with Berry-Filled Recipes!

Our country ‘tis of the, sweet land of liberty! Today is the 4th of July, and the perfect, beautiful day to celebrate our freedom. We hope that you are having a fantastic Independence Day, and we’re bringing you some berry patriotic berry-filled recipes to make your July 4th a little sweeter.

Not only do berries make a tangy, yet sweet dessert option in patriotic hues of reds and blues…they also provide a burst of nutrients and great health benefits! Berries are chock full of antioxidants that are linked to keeping your memory and brain function sharp. These little nutrient-packed fruits also contain phytonutrients called Anthocyanidins, which are naturally-occurring chemicals designed to protect the body’s cells from damage. Berries are also naturally sweet and are said to help keep blood levels balanced, in addition to keeping cholesterol and blood pressure at healthy levels.

So when it comes to berries, eat as many of these heart-healthy powerhouses as your heart desires! A great selection of farm fresh berries from local summer harvests are available at Farmview Market. We’ve found a few perfect berry-filled recipes just for the 4th of July that we’re sure will make your meal burst with berry flavor.

Berry Patriotic Mini-Pies


Ingredients:


2 cups diced berries
3 tbsp. granulated sugar
2 tsp. fresh lemon juice
2 refrigerated pie crusts
1/4 cup milk
flour for dusting
raw sugar for sprinkling
whipped cream

Directions:


Preheat oven to 350 degrees. Line cookie sheet with parchment paper or a baking mat. Stir together the berries, sugar, and lemon juice. Set aside.

On a lightly floured surface, unroll pie crusts and cut dough with cookie cutter (about 3-inches wide). Re-roll scraps as necessary. Place half of the cut dough pieces on the cookie sheet.

Scoop about 1 tablespoon of the filling into the middle of each piece on the cookie sheet. Then place the extra dough pieces on top of each pie. Use the back of a fork to press down around the edges of each pie to seal. Brush tops of the pies with milk. Sprinkle the tops with raw sugar. Bake for about 15 minutes or until golden. Let cool at least 10 minutes before serving. Serve with whipped cream for dipping.

**Please note the actual amount of pies you can get out of this recipe may depend on the size and shape of the cookie cutter you use.

Red, White, and Blueberry Fruit Salad with Honey-Lime Glaze


Ingredients:


16 oz container fresh strawberries, washed & cut in half
1 pint container fresh blueberries, rinsed
3 bananas, sliced into thick pieces
1/8 cup local honey
1 fresh lime, juiced

Directions:


Wash and cut all fruit, excluding your blueberries. Combine fruit in a large bowl.

In a smaller bowl, whisk the honey and fresh lime juice together. Drizzle the honey lime glaze over the fresh fruit and stir lightly. Serve immediately or refrigerate.

Berry Refreshing Coconut Water Popsicles


Ingredients:


16 oz container fresh strawberries
1 pint container fresh blueberries
1 pint container fresh raspberries
24 oz all-natural or organic coconut water

Additional Supplies Needed:


Popsicle Molds
Wooden Popsicle Sticks

Directions:


Drop your berries into popsicle molds and use a butter knife to fold all of the pieces of berry in evenly. Pour coconut water over the berries until each mold chamber is filled. Then insert popsicle sticks. Cover and chill for several hours, until completely frozen. Remove from freezer and allow to sit on the counter for a few moments, or run molds under cool water for easy removal of homemade popsicles.

Berry Festive Yogurt Bites


Ingredients:


1 pint of vanilla Greek yogurt
16 oz container fresh strawberries
1 pint container fresh blueberries

Directions:


Dice strawberries into very small pieces and cut blueberries into halves. Place into a silicone mold and cover the fruit pieces with vanilla yogurt until each mold is full. Make sure you place your blueberries round-side-down for a better presentation. Place in the freezer for about 2 hours, or until frozen. Enjoy quickly once taken out before they melt!
