1 lb Springer Mountain Farms Boneless Skinless Chicken Breasts

1 Backyard Safari White Chicken Chili Seasoning Pack

1 yellow onion, diced

2 cloves garlic, minced

30 oz Eden Organic Navy Beans, drained and rinsed

15 oz whole kernel corn, drained

24 oz. Inspired Organics Chicken Stock

1 bunch fresh cilantro, chopped

4 oz Dairy Fresh Cream Cheese, softened and cut into small pieces

1/4 cup Southern Swiss Half & Half

Optional Toppings:
Jalapenos, diced
Avocado, sliced
Sour Cream
Tortilla Chips
Shredded Colby Jack cheese


  • Add chicken breasts to bottom of slow cooker, top with seasoning packet.
  • Add diced onion, minced garlic, navy beans, corn, chicken broth and cilantro. Stir, being careful not to disturb the chicken breasts.
  • Cover and cook on low for 8 hours.
  • Remove chicken from slow cooker and place into a large mixing bowl, shred, then return to slow cooker.
  • Add cream cheese and half and half, stir, then cover and cook on high for 15 minutes, or until chili is creamy and slightly thickened.
  • Stir well and serve with desired toppings.
