8 slices sandwich bread

2 cups Rock House Creamery Clack's Chapel Cheese, shredded

8 slices tomato

salt and pepper to taste

12 slices Farmview bacon, cooked

1 cup chopped fresh basil

1-3 tbsp butter, softened


  • Heat a medium skillet over medium heat.
  • Spread butter onto one side of one slice of bread and place in pan, butter side down.
  • On that slice of bread, spread 1/4 cup cheese, then place 2 slices tomato, sprinkle with salt and pepper to taste, add 3 pieces of cooked bacon, then ¼ cup basil, followed by 1/4 cup cheese. Top with another piece of bread and butter the top.  
  • Cook sandwiches until golden on both sides. Cheese should be melted, about 3 to 4 minutes per side.
  • Repeat 3 more times to make a total of 4 sandwiches.
