Sweet Potato Casserole
Medium sweet potatoes
1 ½ sticks
Butter, room temperature
1 1/2 tsp.
English mustard powder
Salt and pepper to taste
Preheat oven to 425oF.
Wrap the sweet potatoes in foil and roast 45 – 50 minutes (until soft).
Let potatoes cool. Once cooled, peel and mash the potatoes until smooth.
Set oven temperature to 350oF.
In a medium bowl, mix the butter, eggs, brown sugar, vanilla extract, cream, salt, pepper and cinnamon until smooth.
Combine mixture with the mashed potatoes.
Pour the mixture into a casserole dish and bake for 30-40 minutes at 350oF.
Optional: Top with marshmallows and/or pecans after the baking period is over. Return to oven and broil for 3 – 4 minutes until marshmallows have browned.
