Sweet Potato Casserole

6 medium sweet potatoes

1 1/2 sticks butter, room temperature

2 large eggs

1 cup brown sugar

1 1/2 tsp vanilla extract

1/2 cup heavy cream

1 tsp English mustard powder

1 tsp cinnamon

Salt and pepper to taste


  • Preheat oven to 425oF.
  • Wrap the sweet potatoes in foil and roast 45 – 50 minutes (until soft).
  • Let potatoes cool. Once cooled, peel and mash the potatoes until smooth.
  • Set oven temperature to 350oF.
  • In a medium bowl, mix the butter, eggs, brown sugar, vanilla extract, cream, salt, pepper and cinnamon until smooth.
  • Combine mixture with the mashed potatoes.
  • Pour the mixture into a casserole dish and bake for 30-40 minutes at 350oF.
  • Optional: Top with marshmallows and/or pecans after the baking period is over. Return to oven and broil for 3 – 4 minutes until marshmallows have browned.
