Ingredients:
3/4 cup Dijon mustard
2 tsp fresh ground black pepper
2 tsp kosher salt
1 tsp onion powder
2 tsp garlic powder
1/4 tsp celery seed
1 tsp fresh oregano, chopped fine or 1/4 tsp dried
1 tsp fresh parsley, chopped fine or 1/4 tsp dried
12-14 lbs prime rib roast, ribs can be left on or off the bone, but for more flavor and tenderness bone-in is preferred
Directions:
- Remove prime rib roast from refrigerator about 2 hours before roasting to bring to room temperature.
- Pre-heat oven to 425oF. Line roasting pan with foil.
- Combine all seasonings together to create a rub. Evenly apply rub to rib roast.
- Bake the roast for 20 minutes at 425oF, then reduce oven temperature to 325oF and continue roasting for approximately 4 hours until internal temperature reaches 120oF for medium rare or 130oF for medium.
- Remove from oven and let rest 30 minutes before removing the bone and serving.
