NY Strip Steak

Ingredients:
4 NY Strip Steaks (1 inch thick each)
1/4 cup smoked paprika
Directions:
- Heavily season one side of each steak with your favorite steak seasonings. Let rest at room temperature for 30 minutes.
- Place 2 Tbsp canola oil in a large (12”) skillet and heat on medium high heat.
- Once the oil is hot, place 2 steaks, seasoned side down, into the hot oil. Let cook, untouched for 3 – 4 minutes for a medium rare steak. (Add an additional minute for a medium steak).
- Turn steak over and cook an additional 3 – 4 minutes (Add an additional minute for medium steak).
- Remove steaks from skillet and repeat procedure with the other 2 steaks.
- Place steaks on cutting board and top each steak with your choice of finishing salt and/or herbed butter disks.
- Let steaks rest 2 – 3 minutes before slicing.
