Mesquite Grilled Chicken
Heat the grill to a medium heat. Brush some olive oil on the grate.
In a small bowl, mix together mesquite seasoning, paprika and salt. Set aside.
In a large bowl, toss chicken pieces and olive oil together.
Add the seasoning mix to the chicken, 1 tsp at a time and toss until desired seasoning amount is achieved. Store remainder of the seasoning mix for future use.
Place drumsticks and thighs, skin side up, on the grill for 1 – 2 minutes.
Add the breasts and wings, skin side up, and cook for 5 – 6 minutes.
Flip all chicken pieces over and continue to cook for 6 – 8 minutes, until meat has reached an internal temperature of 165oF.
