Mesquite Grilled Chicken

1/4 cup mesquite seasoning

1/4 cup smoked paprika

3 Tbsp. Kosher salt

2 Tbsp. Olive oil + additional oil for grill grates

8 pieces Chicken (2 breast, 2 thighs, 2 legs, 2 wings)


  • Heat the grill to a medium heat. Brush some olive oil on the grate.
  • In a small bowl, mix together mesquite seasoning, paprika and salt. Set aside.
  • In a large bowl, toss chicken pieces and olive oil together.
  • Add the seasoning mix to the chicken, 1 tsp at a time and toss until desired seasoning amount is achieved. Store remainder of the seasoning mix for future use.
  • Place drumsticks and thighs, skin side up, on the grill for 1 – 2 minutes.
  • Add the breasts and wings, skin side up, and cook for 5 – 6 minutes.
  • Flip all chicken pieces over and continue to cook for 6 – 8 minutes, until meat has reached an internal temperature of 165oF.
