Apple Butter Pastries

Ingredients:

2 cups all purpose flour

1 tsp salt

3/4 shortening, refrigerated

5-6 tbsp ice cold water

1/2 cup Farmview Apple Butter

1 egg (slightly beaten) + 1 tbsp water

1/4 cup sugar + 1 tsp cinnamon

Directions:

  • In a medium bowl, lightly stir together flour and salt with a fork.
  • With a pastry blender or two knives used scissor-fashion, cut in shortening until mixture resembles coarse crumbs.
  • Sprinkle in cold water, 1 tbsp at a time, mixing lightly with a fork after each addition, until pastry just holds together (it should be a little sticky).
  • With hands, shape pastry into a ball and place in the refrigerator for about 30 minutes.
  • Meanwhile, in a small bowl, mix together 1 egg, slightly beaten, and 1 tbsp of water to make an egg wash.
  • In another small bowl, mix together the sugar and cinnamon.
  • Preheat oven to 400 degrees. Line a cookie sheet with parchment paper.
  • When dough is chilled, remove from refrigerator and divide dough into two pieces.
  • On a lightly floured surface with a lightly floured rolling pin, roll one half of the dough into a 1/8 inch thick square (approximately 8 x 8). Trim the edges to make a 7 x 7 square.
  • Cut square into 3 equal strips. Place 2 tsp of Apple Butter at one end of each strip and fold the dry side over. Crimp edges with a fork to seal.
  • Place pastries on prepared cookie sheet and repeat with other half of dough. Any leftover dough from trimmings can be rolled out to make additional pastries.
  • Brush tops of pastries with prepared egg wash and sprinkle with cinnamon sugar mixture.
  • Bake 15- 18 minutes or until slightly brown.
