Tomato & Bacon Grilled Cheese

8 slices Luna Sourdough bread

2 cups Rock House Creamery Clack’s Chapel Cheddar Cheese, shredded

8 slices tomato, add salt and pepper to taste

12 slices Farmview Market Housemade Bacon, cooked

1 cup fresh basil, chopped

Butter, to taste


  • Heat a medium-sized skillet over medium heat.
  • Spread butter onto one side of one slide of sourdough bread and place in pan, butter side down.
  • On that slice of bread, spread 1/4 cup cheese, then place 2 slices tomato, sprinkle with salt and pepper to taste, add 3 slices of cooked bacon, then 1/4 cup basil, followed by 1/4 cup cheese. Top with another piece of bread and butter the top.  
  • Flip when ready. Cook sandwiches until golden on both sides. Cheese should be melted, about 3-4 minutes on each side.
  • Repeat procedure three more times to make a total of 4 sandwiches.
