Tupelo Honey: Most southerners know that Tupelo is amongst the rarest and finest honeys in the world, but they may not know that it is produced during a brief, but intense, two week bloom of the White Tupelo Tree which grows along the Chipola and Apalachicola rivers of northwest Florida. Real Tupelo honey is a light golden amber color with a greenish cast and doesn't crystalize
Tallow Honey: Tallow trees grow in abundance in the foothills of north Georgia. While some consider it an invasive plant, we consider the light-amber honey produced from its flowers to be absolutely delicious
