Sweet Potato Casserole
(approximately 4 cups) Arugula
Extra virgin olive oil
Seedless watermelon, medium diced
Feta cheese, crumbled
In mixing bowl, combine arugula and olive oil and gently toss.
Add the watermelon, and mix gently.
Place in a decorative bowl and top with the feta and balsamic reduction.
