Roasted Bone in Pork Loin

cloves of garlic, minced
extra virgin olive oil
minced scallions or chives
Season pork loin with salt and pepper.
Combine remaining ingredients in a large bowl and whisk until smooth.
Apply mixture to pork and let it marinate in the refrigerator for 2-4 hours.
Preheat oven to 375oF.
Place pork loin, fat side up, in a roasting pan.
Cover loosely with foil and cook for approximately 45 minutes. Pork loin should reach an internal temperature of 145oF.
Let loin rest for 10-15 minutes before slicing.
