Roasted Bone in Pork Loin

1 Rock House Farm Bone-In Pork Loin (3-4lbs)

Salt and pepper, to taste

4 cloves garlic, minced

1 tbsp melted butter

1 tsp dry sage

1 tsp dry rosemary

1 tbsp dry oregano

1/2 cup Field Day Extra Virgin Olive Oil

2 tbsp Braswell’s Dijon Honey Mustard

1 tbsp minced scallion/chives


  • Season pork loin with salt and pepper.
  • Combine remaining ingredients in a large bowl and whisk until smooth.
  • Apply mixture to pork loin and let marinate in the refrigerator for 2-4 hours.
  • Preheat oven to 375F.
  • Place pork loin, fat side up, in a roasting pan.
  • Cover loosely with foil and cook for approximately 45 minutes. Pork loin should reach an internal temperature of 145F.
  • Let loin rest for 10-15 minutes before slicing.
