Corned Beef Hash (serves 4)
Extra Virgin Olive Oil
2 1/2 cups
Corned beef (fat trimmed), small diced
Preheat large cast iron skillet on medium-high heat and add oil.
Add corned beef and cook 8-10 minutes. Remove from pan.
Reduce heat to medium and add butter, garlic, and onion, and sauté until translucent, about 6-8 minutes.
Add potatoes and cook approximately 15 minutes, until fork tender and golden brown.
Add corned beef back to skillet. Mix thoroughly to heat through. Season to taste.
