Black-Eyed Peas (serves 4)
Bacon, small diced (approximately 4 slices)
Onion, small diced
1 ½ tsp
Fresh Black-eyed peas
Dice bacon and onion.
In a large sauce pot, render bacon over low heat, releasing any fat. Do not burn.
Add onions and stir until translucent, approximately 5 minutes.
Next, add salt, pepper, and garlic.
Add the black-eyed peas and water and bring to a boil.
Reduce heat and cook for approximately 45 minutes on medium heat or until beans are tender.
