Apple Butter Pastries
Ice cold water
Farmview Apple Butter
1 Egg (slightly beaten) + 1 tbsp Water
¼ cup sugar + 1 tsp
In a medium bowl, lightly stir together flour and salt with a fork.
With a pastry blender or two knives used scissor-fashion, cut in shortening until mixture resembles coarse crumbs.
Sprinkle in cold water, 1 tbsp at a time, mixing lightly with a fork after each addition, until pastry just holds together (it should be a little sticky).
With hands, shape pastry into a ball and place in the refrigerator for about 30 minutes.
Meanwhile, in a small bowl, mix together 1 egg, slightly beaten, and 1 tbsp of water to make an egg wash.
In another small bowl, mix together the sugar and cinnamon.
Preheat oven to 400 degrees. Line a cookie sheet with parchment paper.
When dough is chilled, remove from refrigerator and divide dough into two pieces.
On a lightly floured surface with a lightly floured rolling pin, roll one half of the dough into a 1/8 inch thick square (approximately 8 x 8). Trim the edges to make a 7 x 7 square.
Cut square into 3 equal strips. Place 2 tsp of Apple Butter at one end of each strip and fold the dry side over. Crimp edges with a fork to seal.
Place pastries on prepared cookie sheet and repeat with other half of dough. Any leftover dough from trimmings can be rolled out to make additional pastries.
Brush tops of pastries with prepared egg wash and sprinkle with cinnamon sugar mixture.
Bake 15- 18 minutes or until slightly brown.
