Ingredients:

5 oz arugula (approx. 4 cups)

1 tbsp Field Day Extra Virgin Olive Oil

2 cups seedless watermelon, medium diced

2 oz Rock House Creamery Feta Cheese, crumbled

1 tbsp balsamic reduction

Salt, to taste

Pepper, to taste

Directions:

  • In a mixing bowl, combine arugula and olive oil and gently toss.
  • Add the watermelon, then mix gently.
  • Place in a decorative bowl and top with feta, balsamic reduction, salt, and pepper.
